Pikelets

We had a wonderful neighbor, eighty-four year old Ally, bring us some pikelets. I had never heard of pikelets before, but the kids LOVED them. We started making them for breakfasts or treats because they are quick and tasty. They are similar to pancakes but smaller and sweeter. The kids can grab them for breakfasts and they won't want syrup to go with them.  I included the recipe below, if you want to give it a try. 



Pikelets
1 cup flour
1 teaspoon of baking soda
1/4 teaspoon of salt
1 egg
1/4 cup sugar
3/4 cup of milk (approximately)

Stir flour, baking soda and salt into a bowl. In another bowl, beat eggs and sugar until thick. Add with milk to the sifted ingredients. Mix until jut combined. Drop on griddle or non-stick pan. Turn pikelets over when bubbles start to burst on top surface. Cook second side until golden. (Makes 8-10)

We double the batch. They are super yummy with Nutella!
